Golden Plum Butter

If your mouth hasn't exploded in a really long time, today is your lucky day.

 

The simplicity of this recipe belies the explosion of flavour that results from putting together plums, sugar, and butter in a pot and cooking it. I wait all year for the perfect golden plums of Niagara for this reason. The reality of the above photo is about 2.5 seconds after it was taken that spoon on the plate went directly into my mouth. It's probably the best use of fruit and sugar I can think of.

By now you've probably surmised that I really dig recipes that have multiple uses. This can go sweet or savoury, meaning if you want to eat it on bread for breakfast, use it to spread over a cake layer, sandwich between some buttery streusel as in these Jam Squares, or fill a tart, you can. You can also serve it alongside a plate of cheeses, mix with some grainy mustard and spread it over a pork loin, BBQ'ed chicken or salmon. Add to some ginger, garlic, a bit of tamari and hot chilis and toss with noodles or dunk in a spring roll. It also makes a killer salad dressing when you add a clove of garlic, a dash of balsamic, olive oil, and thin with a little water (imagine kale or spinach, roasted sweet potato, some soft goat cheese and crushed hazelnuts). Golden plums are everywhere right now, so make sure to get in on the action before they're sadly gone for another year.
