Save the toast for another day and sandwich your favourite jam between layers of buttery crumbs and crispy almonds.
I love this recipe because it's one of those rare craveable treats that comes together in very little time. I also enjoy making jam, but really, how many uses are there for jam? I always seem to find myself with half jars of this and that and other than spreading it on toast or using it to fill fiddly tart shells, inspiration escapes me (feel free to share your jam-using ideas in the comments!)
For these I often mix together flavours of whatever jam I have on hand and am never disappointed. A jam with a bit of tartness goes very well with the buttery crumbs, and the other day I made a batch using Golden Plum Butter as the filling and they were amazing.
