Loaded with grains and hearty lentils, I make this quick-to-make and versatile vegetarian chili often. The game-changer is the addition of dark cocoa powder, which adds a nice bit of complexity and rich texture. It's great with a dollop of sour cream, grated cheddar and toasted pumpkin seeds for crunch. Try serving it over wedges of Roasted Cauliflower, or in a Messy Bun. Like most chili, it gets better after a day or two, so you can make a big pot and dive in whenever you need a quick, satisfying meal.
