This fresh Indian condiment can go anywhere you want a cool accompaniment for a bit of spice.
I usually have some raita on hand in the fridge because it goes so many places, so well. Of course it's usual habitat is alongside some rich, spicy Indian food, because the dairy and cool cucumber offsets the heat. It also works equally well mixed up with a can of tuna for a lighter tuna salad, stirred into pasta salad, or dolloped onto a bowl of chili. It's a perfect topping for Paneer Tikka Tacos.
